Can I interchange GFX card, power supply and screens?

PSU will all work. GFX cards depends on model. Screens have different connectors.

GFX with heatsink will be ok for all models?

No. It will work but an unsupported card will not have any thermal control. If you swap a card that is not native to the machine you will need to stick the ODD thermal sensor to the back of the GFX heat sink or the card will over heat.
